  • Preheat the oven to 425 degrees F. Line a half-sheet baking pan with aluminum foil and spray it with nonstick cooking spray.
  • In a small bowl, beat the egg whites on high speed until stiff peaks form. Set aside.
  • In a large bowl, combine and whisk together the egg yolks, sugar, vanilla, and butter until smooth. Slowly mix in the buttermilk.
  • Combine the dry ingredients and whisk together. Then whisk the dry ingredients into the wet ingredients.
  • Gently fold in the whipped egg whites.
  • Pour the batter into the prepared sheet pan and bake for 15 minutes or until a toothpick inserted in the center comes out clean.
  • Slice into eight equal pieces and serve with butter, maple syrup, and any other favorite pancake toppings.
