Sheet-Pan Pancakes

Ingredients
  • Nonstick cooking spray
  • 2 eggs (separated)
  • 1/4 cup sugar
  • 3 1/2 tsp vanilla extract
  • 4 tbsp salted butter (melted)
  • 2 cup buttermilk
  • 2 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
Instructions
  1. Preheat the oven to 425 degrees F. Line a half-sheet baking pan with aluminum foil and spray it with nonstick cooking spray.
  2. In a small bowl, beat the egg whites on high speed until stiff peaks form. Set aside.
  3. In a large bowl, combine and whisk together the egg yolks, sugar, vanilla, and butter until smooth. Slowly mix in the buttermilk.
  4. Combine the dry ingredients and whisk together. Then whisk the dry ingredients into the wet ingredients.
  5. Gently fold in the whipped egg whites.
  6. Pour the batter into the prepared sheet pan and bake for 15 minutes or until a toothpick inserted in the center comes out clean.
  7. Slice into eight equal pieces and serve with butter, maple syrup, and any other favorite pancake toppings.
