Fruit Scones

Ingredients
    Cover in very hot water for 5 minutes, drain thoroughly
  • 1/2 cup dried apricots, cranberries, or frozen blueberries 
  • Mix in a mixing bowl
  • 2 cup flour 
  • 2 tsp baking powder 
  • 1/2 tsp baking soda 
  • 1/2 tsp salt 
  • 1/4 cup brown sugar 
  • 1/2 cup cold butter cut into chunks 
  • Mix together and stir in just till mixed: 
  • 1 cup sour cream 
  • 1 large egg yolk 
  • 1/2 tbsp orange zest

    Prepare
  1. Preheat oven to 400°
  2. Turn the dough out onto a floured surface.  Pat into two 6” disks.  Cut the disks into wedges and place them on an ungreased baking sheet with room around them to expand.  Bake 12 min. or until golden.

  6. Glaze
  7. Allow to cool till warm, and prepare to drizzle with glaze. 
  8. Glaze:  mix powdered sugar, vanilla and orange juice together, and pour on top of baked scones.
