  • 5 lb roast beef or combination beef and pork roast
  • 3 tbsp vegetable shortening
  • 3 onions (chopped)
  • 4 oz chopped green chilies
  • 14 oz green chili salsa
  • 1/4 tsp garlic powder
  • 4 tbsp flour
  • 4 tsp salt
  • 1 tsp ground cumin
  • 9001 Juices from beef roast
  • Chimichangas
  • 6 large flour tortillas
  • 3 cup Mexican meat mix
  • vegetable oil for frying (cover either half of the rolled tortilla, or all of it.)
  • salt and pepper to taste
  • 7 oz green chili salsa
  • 2 tomatoes (chopped)
  • 1 cup Guacamole ((see below))
  • 1/2 pt sour cream
  • 6 ripe olives (for garnish)

  • a few drops of Tabasco sauce
